Heating a heavy baking sheet in the oven before adding the potato cubes gives them a sizzling head start to a nicely browned surface. A light sprinkling of grated Parmesan and a bit of paprika adds flavor and helps the potatoes to brown quickly.
2 lb. small red new potatoes, unpeeled, cubed (1/2 inch) (generous 5 cups)
2 tablespoons extra-virgin olive oil
1/4 cup grated Parmesan cheese
2 teaspoons smoked paprika
1/2 teaspoon kosher salt
1 Place large rimmed baking sheet in oven. Heat oven to 400°F.; heat baking sheet 10 to 15 minutes or until very hot.
2 Meanwhile, combine all ingredients in large bowl, stirring to coat potatoes. Carefully remove hot baking sheet from oven; spread potatoes on pan.
3 Bake 35 to 45 minutes or until golden brown, stirring every 15 minutes.
6 (3/4-cup) servings
